WESLACO, Texas (KVEO) — Imagine opening your dream bakery during a global pandemic.
That is what a Weslaco mother-daughter duo, Irma and Lizette Ramirez did.
Simply Sweet Cupcakery opened on May 25 offering a variety of cupcakes, macaroons, Flans, cheesecakes and cakes.
Irma said her mother is the master baker, “my mom and Victoria come in at five in the morning.”
Irma said her mother learned to bake on YouTube and now owns her own bakery.
“It just took off from there one day and look at us now,” said Lizette.
Irma said opening Simply Sweet during this time was not easy.
“We lost out on a lot of money because we still needed to pay rent, and we had to buy everything.”
Simply Sweet was not established yet, and therefore they did not qualify for any type of assistance.
“We are a brand-new business, and they didn’t give us any money for anything,” said Irma.
So, Irma turned to Twitter and asked the locals to come and give their support. Her post got over 500 retweets and over 1,500 likes.
“None of my Twitter gets any response so it was crazy that it blew up,” said Irma.
