The Christmas season is in full swing and chances are, you'll probably be throwing a party in the near future.

This year, why not throw a unique twist to an otherwise traditional dish?

James Thompson from HEB Plus! in Brownsville stopped by Action 4 Sunrise to do just that.

Roasted Chestnuts 

Heat oven to 375. Score 1# nuts on flat side and roast in shallow roasting pan for 25-35 minutes. Allow to cool then peel off the shell. Melt 1/4 cup butter in saute pan. Toss nuts to coat and sprinkle with salt and cinnamon.

These are very traditional around Christmas time. You will often see them sold by street vendors in nearly every major city, particularly in the Northeast US, Christmas week.

 

Prime Rib

Heat oven to 400 and sear 10-15 minutes. Lower to 250-300 and roast 15 minutes for every pound. For medium rare center remove from oven when center reaches 110 degrees. Allow to rest for 30 minutes during which time the meat will continue to cook.

With Prime Rib it's all about the marbling; the more the better. Crown Roasts are exceedingly popular during Christmas time due to the obvious symbolism.

 

Egg Nog Cheesecake

Crust: 1 cup graham crumbs mixed with 2 T sugar, and 3 T melted butter.

Cake: 24 oz cream cheese, softened and blended with 1 cup sugar, 3 T flour, and 3/4 cup nog. Blend in 2 eggs, 2 T vanilla or rum, and a pinch of nutmeg. 

Bake in spring form pan with a water bath for 1 1/4 hour or until set.
