Marinated Grilled Chicken

Serves 4

4 boneless skinless chicken breasts

2 1/2 tbsp. canola or olive oil

1 tbsp. coarse/fresh black pepper

1 tbsp. minced garlic or 2 tsp. garlic powder

1 tsp. dried basil

Mix oil and seasonings in a bowl. Rub chicken breasts with the oil mixture and put into the same bowl. Cover with wrap and put into the refrigerator for about 1-1.5 hours.

Sear the chicken on the hot grill for about 1 minute per side, then move the chicken to a less intense hot part of the grill and cook till done, about 10-12 minutes at least.
