Fresh Fish Chowder
4-6 servings
4 slices of bacon
2 cups cubed potatoes
1 medium onion; chopped
1 tsp. salt
1/2 tsp. pepper
1 tsp. dill weed
2 pounds of boneless fish fillet (cod, salmon, tilapia, etc.)
4 cups evaporated milk
1/2 stick butter/blend
Fry bacon in a large soup pot, break into one inch pieces.
Add the potatoes, onion, spices and 4 cups of water. Bring to a boil and simmer 10-15 minutes.
When potatoes are barely soft, add fish and cook at least 15 minutes, until tender.
Add evaporated milk and butter. Bring to a boil and simmer slowly for 10 minutes.
