Peppermint Butter Cookies
Makes 4-6 dozen
1 cup butter/blend, room temperature
1 cup powdered sugar
1 tsp. vanilla
1 tsp. peppermint extract
1 1/2 cups sifted flour
2 eggs
1 tsp. baking powder
1/2 cup finely crushed striped peppermint candy
Thoroughly cream butter and sugar. Mix in vanilla and peppermint extract.
Add flour, salt, and baking powder, mix well. Add eggs and peppermint candy, blend thoroughly.
Use a teaspoon to drop dough onto a greased cookie sheet.
Bake at 325 degrees F for about 15 minutes.
Do not over bake or the cookies will be too hard.
