Baked Stuffed Cucumber
- 4 cucumbers, halved the long way, seeds scooped out
- 1 cup breadcrumbs
- 1 cup dry grated parmesan cheese
- 1 tbls dry dill weed
- 3 tbls butter or oil
- Salt & pepper to taste
Mix all ingredients and spoon into cucumber halves. Bake until tender, about 30-40 minutes at 340 degrees. Serve warm.
